Super crispy fries
Today I teach you how to prepare super crispy fries, a recipe ideal to eat with a beer or use them as a garnish for a meat or fish dish.
The reason why these potatoes are so good is because they have three cooking times: First they are cooked for a few minutes to remove the starch, then they are cooked at 150ºC (302ºF) and finally they are fried in very hot oil to make it crunchy.
You prefer eat them like a snack or like a side dish? If you had to accompany them with a sauce, what would it be?

To prepare these super crispy fries you will need:
Potatoes
Olive oil
Salt
To prepare these super crispy fries you must follow this steps:
-Peel the potatoes.
-Cut the potatoes into sticks.
-Cook the potatoes in boiling water for 3 minutes.
-Transfer the potatoes to a container with cold water to stop cooking.
-Confit the potatoes at 150ºC (302ºF).
-Fry the potatoes at 180ºC (356ºF) until golden.
-Pass the potatoes on absorbent paper to remove excess oil and sprinkle with a little salt.
