Santa Teresa sweet yolks
Today I teach you how to prepare one of my favorite recipes, Santa Teresa sweet yolks, small balls made with yolks and syrup.

To prepare these Santa Teresa sweet yolks you will need:
6 egg yolks
50 ml. (1,69 fl. oz.) of water
90 gr. (3,17 oz.) of sugar
Icing sugar to coat the yolks

To prepare these Santa Teresa sweet yolks you must follow this steps:
-Heat the water with the sugar until it becomes a syrup (110ºC/230ºF)
-Add the syrup slowly to the yolks while stirring.
-Cook the yolks over a low heat while stirring until a you get a paste.
-Cool the yolk paste.
-Make balls with the yolk paste.
-Pass the egg yolk paste balls first through icing sugar and then through sugar.
-Place the yolks in small paper molds.
