Pa de pessic

Today I teach you how to prepare pa de pessic, a typical Catalan cake that is characterized by its delicate and very spongy texture.

It is ideal to eat with a coffee, but it can also be cut in half lengthwise and filled with some sweet cream to make a delicious cake.

 

I made this cake in using a round baking pan of 23 cm. (9 inches) diameter and I highly recommend to cover the pan with baking paper so that it does not get stuck and thus avoid any unpleasant surprises.

 

Here is a small tutorial if you don't know how to line a mold with baking paper.

To prepare this pa de pessic you will need:

 

  • 4 eggs

  • 150 gr. (5,29 oz.) of sugar

  • 50 gr. (1,76 oz.) of flour

  • 50 gr. (1,76 oz.) of corn flour

  • A little bit of salt

To prepare this pa de pessic you must follow this steps:

 

-Separate the yolks from the whites.

 

-Beat the egg yolks with the sugar.

 

-Mix the flour with the corn flour.

 

-Add the flour mixture to the yolks little by little.

 

-Beat the whites eggs with a little salt until they are stiff.

 

-Incorporate the whites to the mixture with delicate enveloping movements.

 

-Pour the mixture into the mold and bake 30 minutes at 160ºC (320ºF) with heat down.

 

-Bake for 10 more minutes at 160ºC (320 ºF) with heat up and down.

 

-Turn off the oven and let the cake rest inside for 5 minutes.

 

-Remove the cake from the oven and let cool.
